Stuffed Artichoke bottoms with Beef.

Ingredients

  • 1 lb ground beef

  • 1 medium onion, diced

  • 1 package of frozen artichoke bottoms, thawed

  • 2 tbsp olive oil

  • 1 cup chicken or beef broth

  • 2 minced cloves garlic

  • 1 tsp allspice 

  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 350°F .

  2. Make the stuffing: In a skillet over medium-high heat, warm 1 tablespoon of olive oil. Add the diced onion and cook until they soften . Add the ground beef and cook, until browned, about 10 minutes. Stir in the minced garlic, allspice, salt, and pepper. 

  3. Prepare the baking dish: Arrange the thawed artichoke bottoms in a baking dish.

  4. Stuff the artichokes: Spoon the meat mixture into each artichoke bottom.

  5. Add the sauce: In a bowl, whisk together the broth and the remaining olive oil. Pour the sauce into the baking dish, around the stuffed artichokes.

  6. Bake: Cover the dish tightly with aluminum foil and bake for 35–40 minutes, or until the artichokes are tender when pierced with a fork. Check halfway through and add more water or broth if the liquid evaporates too quickly.

  7. Serve:  hot, with rice.
